On the heels of his opening of El Paseo downtown earlier this year and a cookbook celebrating local ingredients, replacement for Dish opens with pub food, craft beers and local wines at 507 Miller.

Though he can be found on all manner of Food Network shows and has been on something of a biz-launching spree of late – from and to a – the past year has provided ample evidence that celebrity chef Tyler Florence is interested in deepening his ties to his adopted hometown of Mill Valley.

At the end of a year that saw him the historic downtown in a joint venture with Sammy Hagar and tout local ingredients in his popular , Florence has been one of the driving forces in the revamp of the former Dish restaurant at 507 Miller Avenue. Its replacement, Hawk’s Tavern, opened this week, promising seasonally inspired pub fare like bangers and mash and fish and chips as well as a selection of craft beers and local label wines. Wayfare Tavern’s Michael Thiemann serves as executive chef.

The beer list was developed by Mill Valley resident Austin Lowery, while the wine list was curated by Dan O’Brien, formerly of Cavallo Point at Fort Baker.

Lori Yeomans, who designed the interiors at Florence’s El Paseo and Wayfare Tavern in San Francisco, oversaw the remodel at 507 Miller. The main dining room seats 40 and features two round, tartan and leather booths, two banquettes, and a built-in wood bench. A second dining room seats 12 and the space’s long deck seats an additional 28. The space features repurposed barn wood lining the walls and a concrete countertop that serves as a portion of the bar.
