Spicy Sweet Potato Fries with Avocado Dip

These "fries" are so good you might want to double the recipe.

Spicy Sweet Potato Fries with Avocado Dip

These sweet potato fries are a real crowd pleaser. They’re crispy, salty, spicy and sweet but the best part is they’re jam packed with nutrients. The avocado dip offers a cool compliment to the heat of the fries.

SPICY SWEET POTATO FRIES WITH AVOCADO DIP

Serves 4

INGREDIENTS

Fries:

4 medium sweet potatoes, unpeeled and cut into 1/4- to 1/2-inch fries

2 Tbs olive oil

2 Tbs brown sugar

2 tsp. sea salt

1 tsp. chili powder

1 tsp. cumin

1/2 tsp. garlic powder

1/2 tsp. black pepper

1/4 tsp. cayenne pepper

Dip:

1 avocado

6 oz. fat free plain Greek yogurt

2 scallions, chopped

½ Tbs lime juice

Salt and pepper to taste

INSTRUCTIONS:

Fries:

  1. Preheat oven to 425°. Line two large baking sheets with aluminum foil and place on the bottom racks of the oven to heat up.
  2. Put cut potatoes and all other ingredients for the fries into a large resalable plastic bag and shake to fully distribute the oil and spices.
  3. Remove the trays from the oven and lay the potatoes on them in single layers. Don’t crowd the potatoes as they need room around them to crisp up.
  4. Return trays to oven and bake for 30 minutes, flipping each fry halfway through. After 30 minutes, flip the fries one more time, increase heat to 450° and bake for another 10 minutes or until crispy.  

Dip:

Blend or mash all ingredients in a small bowl. Mash if you prefer a little texture to your dip.
