Catering chef Tscharner Dickerson makes 'Proposal Cheese'

Can cheese really make someone propose?

We busted into Grant Park's beloved Stone Soup Kitchen after hours to find out. The cafe is known for its delicious soups, sandwiches and breakfast, but they also cater, so we asked catering chef Tscharner Dickerson to whip up one of her favorite items.

Try this simple recipe for yourself and you may just get propositioned.

 

Proposal Cheese
Yields: about 3 packed cups 
Serves: 6-12 (if served with crackers), 3-4 if served as sandwiches 
Time: 10 minutes (including shredding)

Ingredients:
2 c. shredded sharp cheddar cheese
2 c. shredded Monterey Jack cheese
1/4 c. diced roasted red peppers
1/4 c. diced pickled jalapenos
1/2 c. sour cream

For best results, shred the cheese rather than buying it pre-shredded. Leave a little bit of juice in the peppers and jalapenos. Mix all ingredients together with a spatula in a large bowl. Serve with crackers or on a sandwich.

For a sandwich, Stone Soup recommends serving on a croissant with tomato, lettuce and sunflower sprouts.
