During our vacation last week there was a lot of talk about food. I suppose that is to be expected when you put four people who love to cook in a house with a gourmet kitchen. The house had an AGA stove. Have you heard of an AGA stove? No? Neither had we. This stove is always running and has four separate ovens that vary in temperature along with two hot plates on top that are also always heated. Though there was a bit of a learning curve for us when we first arrived, by mid week we were in all madly in love with AGA and wanted one of our own. (Though at the cost of 10 grand I don't see her in any of our futures.)
One of the best dishes we ate was by far the simplest-roasted vegetables. One of the ovens had a constant temperature of 450 degrees which was perfect to roast some veggies. The basic recipe was always the same: olive oil, salt and pepper, and each night we'd throw some different spices in.
One night we had sweet brussel sprouts, the next was carmelized onions, mushrooms and carrots. My favorite by far though was cauliflower. We coated it with the usual suspects then added garlic, paprika and some red pepper flakes, which added just the right amount of bite.
Though it hasn't been as much fun cooking in my plain old oven now that vacation is over, I've kept on making my roasted veggies. Maybe I'll ask Santa for an AGA.
Here is the recipe.
- 5 garlic cloves, minced
- 1/4 cup extra virgin olive oil
- 1 large head cauliflower, separated into florets
- 1 tsp paprika
- 1/4 tsp red pepper flakes (or more, if you like it hot)
- 2 tsp kosher salt
- Pepper to taste
- Preheat oven to 450 degrees.
- Spray a cookie sheet with olive oil or cooking spray.
- Put olive oil, garlic, paprika and red pepper flakes into a large resealable bag.
- Add cauliflower and shake to mix.
- Pour onto the cookie sheet and season with salt and pepper.
- Bake for about 40 minutes or until golden brown, stirring halfway through.
You can also add some parmesan cheese to this when cooking time is almost up.
