As summer winds down there are a few summer-time recipes I've had on my list to make, but just haven't had the time. This recipe for peach cobbler is one of them.
I originally got the recipe from a blog, The Faux Martha, and recently modified it to suit my busy lifestyle. You can throw this together in five quick minutes, and it only take 30 minutes to bake. So whether you're in a hurry to make a weeknight dessert, or need to bring something to the Labor Day barbecue —this is the perfect recipe.
- 1 stick of salted butter
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1 dash of salt
- 1 cup sugar
- 1 cup buttermilk
- 1 small bag of frozen peaches (1-1/2 cups), frozen—do not thaw
To start, place the butter in an 8-by-8 baking dish and set it in the oven while it preheats to 350 degrees. You want the butter to melt, but not to brown.
While the butter melts, sift together the flour, baking powder, salt and sugar. Once mixed together, whisk in the buttermilk. You want the batter to be pourable. If it's too thick, add in 1 tsp. of buttermilk at a time until it reaches the desired consistency.
By now, the butter should be melted. Remove the dish from the oven and immediately pour the batter over the melted butter. Place the fruit on top of the batter. Bake for 30-35 minutes, or until the crust is golden brown. Serve with a scoop of vanilla ice cream, or a dollop of whipped topping and enjoy!
