Two 15 oz cans corn, preferably organic and Eden brand
Two 15 oz cans black beans, preferably organic and Eden brand

About 2 TBS balsamic vinegar, more to taste
Approximately 1/2 cup of chopped basil
Two cloves of crushed garlic
One large tomato or one cup cherry tomatoes, preferably organic
Salt and pepper to taste
Drain and rinse cans of corn and beans and add to a large bowl (or preferably one that doubles as a tupperware for easy fridge storage). Chop or hand tear the basil and toss in the bowl. Chop the tomatoes and toss in (I prefer them seeded). Stir everything together and add in salt and pepper to taste.
