Culinary Programs: Art of Dhal Puri and the Cultural History of Chopsticks

Workshop: how to make dhal puri, East Indian Flatbread and Chopsticks - History at the Charles B. Wang Center, Stony Brook University

The Charles B. Wang Center at Stony Brook University is pleased to present the workshop, The Art of Making Dhal Puri: East Indian Flat Bread by Shakeera Thomas on Wednesday, September 23 at 1:00 pm at the Chapel ($10.00 General and $5.00 Students/Seniors) and the lecture, Chopsticks - A Cultural and Culinary History by Dr. Q. Edward Wang on Thursday, October 8, 2015 at 2:30 pm at Lecture Hall I with free admission.

Dhal Puri , is an East Indian-style flatbread filled with spicy yellow split peas that is traditionally made in Guyana during special holidays, for family and friends and especially for weddings. Shakeera Thomas will demonstrate the process of using the masala brick, a grinding kitchen tool, and tawah, a griddle using her homemade recipes. Participants will have the opportunity to make and knead their own dough that they can take home to bake. Before participants leave, they will have the opportunity to savour homemade dhal puri.

Chopsticks have become a quintessential part of Asian culinary experience across the globe, with more than one-fifth of the world’s population using them daily to eat. In this talk on the culture, custom and history of chopsticks described in his book, Chopsticks - A Cultural and Culinary Histor y , Q. Edward Wang will chart their evolution from a simple eating implement in ancient times to their status as a much more complex cultural symbol today. He will also illustrate how chopstick use has influenced Asian cuisine and how, in turn, the cuisine continues to influence chopstick use, both in Asia and across the globe. A book signing will follow the lecture and books will be available for purchase. An audience chopsticks contest will take place after the program.
