In Virginia, restaurant inspection reports aren't quite as simple as getting a letter grade or an easy-to-see number rating to post in the front window.

That said, we all want to know how our favorite restaurants stack up on cleanliness and sanitation. Inspectors grade restaurants based on critical and non-critical violations.

A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

"Ideally, an operation would have no critical violations, or none which are not corrected immediately and not repeated. In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.

The site continues: "Keep in mind that any inspection report is a 'snapshot' of the day and time of the inspection. On any given day, a restaurant could have fewer or more violations than noted in the report. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment."

Below, find the latest restaurant inspection from the Virginia Department of Health. These inspections reflect visits from inspectors during the last few weeks. Some of the violations were corrected immediately during the recent inspections.

Date of inspection: Jan. 28
Critical: One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical (corrected during inspection): Some food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device.
Critical: A review of the menu with the foodservice operator indicates that there is no consumer advisory for food items that may be served raw and/or undercooked.
Non-critical (corrected during inspection): Water from the handwashing sink at kitchen, near door to dining room, was measured at a temperature less than 100 degrees. Hot water was turned off underneath sink and was turned back on by manager.
Non-critical: Some methods used for cooling were not adequate to facilitate proper cooling.
Non-critical: Refrigeration unit is not operating properly and is unable to maintain cold food at or below 41 degrees.
Non-critical: The nonfood-contact surfaces some following equipment had accumulations of grime and debris.

Critical (corrected during inspection): A food handler was observed drinking from an uncovered beverage container while in the kitchen.
Critical (corrected during inspection): Raw animal food stored over ready-to-eat food in the freezer unit.Observed raw rib eye beef and raw beef sandwich slices stored above bread products inside 3-door reach in freezer.
Critical (corrected during inspection): Food items were found hot holding at improper temperatures using a calibrated food temperature measuring device.
Critical (corrected during inspection): Refrigerated, ready-to-eat, potentially hazardous food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked.
Non-critical: The door gaskets of the following unit are torn and damaged: 4 door refrigerated prep unit.
Non-critical: The nonfood-contact surfaces of some equipment had accumulations of grime and debris.
Non-critical: Observed that the floors beneath and behind equipment and storage shelves are in need of cleaning.
Non-critical: Observed that lockers and personal storage facilities are not located to protect food, equipment, linens, and/or single-service items from contamination. Observed employee coats and other personal items stored on shelves with single service articles.
Non-critical (corrected during inspection): Observed that sign or poster that notifies food employees to wash their hands is not provided at any of the handwashing sinks used by food employees.

Critical (corrected during inspection): The person in charge failed to state the minimum cook temperatures and times for potentially hazardous foods.
Critical (corrected during inspection): One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical (corrected during inspection): Observed the pre-wash spray hose to extend below the flood rim level of the sink basin at the 3-vat sink.

Critical (corrected during inspection): The person in charge failed to state the minimum cook temperatures and times for potentially hazardous foods.
Non-critical (corrected during inspection): There were not paper towels at the back handsink.
Non-critical (corrected during inspection): There was no soap at the back handsink.
Non-critical: The following items are intended for household use only and are not approved for use in a commercial food establishment: 1) Oster microwave oven
Non-critical: There are not three stoppers for the 3 vat sink.

Tomo Sushi & Grill

Date of inspection: Jan. 22
Critical (corrected during inspection): Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Open drink stored on prep table in kitchen.
Critical (corrected during inspection): Food items for which time rather than temperature is used as a control is not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.
Critical: The raw and/or undercooked foods provided on the menu, menu board, table tent or brochure do not provide a disclosure statement. CFM stated that the corrected menu provided to the Health Department during an inspection in 2011 is still not in use, old menus have not been used up yet.
Non-critical (corrected during inspection): Observed that hand soap was not provided woman's restroom hand washing sink.

Non-critical (corrected during inspection): Observed that hand soap was not provided at each handwashing sink. Soap (and dispenser) missing from back handsink.
Non-critical: Observed that the Quat dispenser is not functioning properly, dispensing solution at +500 ppm. CFM was observed diluting solution by adding water to the sink after testing.
