4 Mile Fresh Offers Up Organic Produce

If you've never been inside 4 Mile Fresh and you are into organic food, check it out. We asked owners Megan Wickert and Heather Erickson what was the biggest trend in fresh and they said... Kale.

Megan Wickert grew up eating organic food in California and had been a regular customer of Tracy's Produce before she bought the store and renamed it 4 Mile Fresh.

The store is located at 601 4-Mile Road.

"I saw a guy outside working on the building and told him, 'I wanna do it,'" she said. "The rest of history."

Wickert asked her friend, Caledonia native Heather Erickson, to be her business partner.

"The timing was perfect," Erickson said. "I've always liked eating healthy because it just makes me feel good. But I've also felt like this was my calling and that it is our responsibility to eat well and buy things locally whenever we can."

Right now, not all of the produce in the store is local, but it is organic from organic food supplier Goodness Greeness. They are also working with several local farms and farmers markets to bring in locally produced food when it becomes available.

The store carries everything from organic buffalo meat to asparagus to organic sweet potato chips.

"It was important to offer conventional, but organic, produce because we would often have to go to several stores to get them," Erickson said.

Wickert and Erickson update their 4MileFresh Facebook page often to notify customers what new things are coming into the store. 4MileFresh is open from 10 a.m. to 6 p.m. Monday through Friday, 8 a.m. to 4 p.m. Saturday, and 10 a.m. to 4 p.m. Sunday.

We also asked what was the freshest idea out there in organic produce and to offer up a quick idea to use the ingredient, which is in the attached video.

Kale salad

  • One pound of kale with the rib removed
  • The juice from one lemon
  • 1/2 teaspoon course salt
  • 3 Tablespoons olive oil
  • 1/2 cup of parmesan cheese
