When closed down in the mid-1990s, Joe Scrima said his wife, Christine, may have been the most disappointed person in Waukesha.

The couple’s cousins had owned the restaurant, which was considered a legacy in Waukesha. And when it shut down, Scrima decided to begin baking pizzas in his home.

“She loved it,” said Scrima, who is the father of Waukesha Mayor Jeff Scrima. The mayor is not involved in the business. “So I started to experiment trying to get that taste. Through trial and error we developed something that we consider on par with that.”

It wasn’t until the beginning of June that he opened Scrima’s Pizza in Waukesha in Dave’s Mobil at the corner of North Grandview Boulevard and Silvernail Road. The business has been going “very well” after only a month, he said.

“It has been just phenomenal,” Scrima said. “The people of Waukesha remember … I was really surprised by the loyal following that name had. … People that tried the original Scrima’s will not be disappointed.”

Scrima’s Pizza offers pizza, sandwiches and a salad bar. Scrima makes his own sausage on site at the restaurant. There is seating inside and outside the gas station for a total of 16 people.

The restaurant is open from 11 a.m. to 8 p.m. daily.
