Barrio Bagel & Slice Limited-Availability Loaf in Partnership with Mingle+Graze Begin MAY 22

Don Guerra, of Barrio Bread and Barrio Bagel & Slice, is all about community, intention and a passion for amazing bread. In his latest venture that weaves these meaningful concepts together, Guerra has partnered with Mahfam Moeeni-Alarcon, chef and co-owner of Mingle + Graze, to develop a new bread recipe, the Caravan Fougasse.
The Caravan Fougasse is inspired by the ancient caravan routes that connected ancient Iran, North Africa and Al-Andalus (Spain). Guerra combines his Arizona heritage grains from Hayden Flour Mills to create this fougasse, which is then layered with Mahfam’s house-marinated olives and Mingle + Graze’s featured cheese, Los Cameros, a mixed-milk cheese from Spain’s Rioja region. Za’atar and sumac spices give each loaf a touch of brightness to reflect a world shaped by movement, connection and exchange.
The results of this incredible collaboration will be available by the loaf at Don Guerra’s Bagel & Slice as well as the Gilbert Farmers Market beginning Friday, May 22 for $15 per loaf.
At Mingle + Graze, guests can enjoy the bread along with a seasonal board featuring Los Cameros cheese (which is also featured in the bread), marinated olives, halva (a sweet sesame paste spread), membrillo (quince paste), nuts, artisanal butter and accoutrements for $24.95. The board serves one to three guests as a perfect snack or starter.
