Blog: Chocolate-Dipped Rice Krispies Treats on a Stick

From kids to adults, this is a beloved treat that pleases everyone's taste buds.

On the same night I brought Sour Cream Coffee Cake, I also made Chocolate-Dipped Rice Krispies Treats. Just in case the kids didn’t want the cake, I figured they would love this dessert. A funny thing happened though and I bet you can guess. The adults mostly gravitated towards them and even emailed me asking for the recipe. It was fun to watch and see everyone with huge smiles on their faces.

I have made Rice Krispies Treats many, many times. They have been formed into balls, cut with cookie cutters, cut into squares, dipped in chocolate, colored with sprinkles and lots of other varieties that have been requested again and again. Sometimes I make them in an 8x8 inch pan and other times I use a 9x13 inch pan. I have used mini marshmallows and large marshmallows, salted butter and unsalted butter.

What I’m trying to say is that this is a no-fail, super-flexible, always-fantastic, quick recipe. You can even make this with other kinds of cereal or colored marshmallows. I bet Cocoa Krispies would be fantastic. I may have to add that to my to-do list.

There are a couple things to keep in mind when it comes to the texture and size.  If you prefer a harder Rice Krispies Treat, press the mixture firmly into the pan. If you prefer a taller Rice Krispies Treat, use a smaller pan. 

When I made these to be placed on stick, I wanted them somewhat soft and thin. Here’s how I made them:

 

3 T unsalted butter

pinch of salt

1 10 oz. package large marshmallows (you can also use 4 c mini marshmallows)

6 c Rice Krispies

6 oz. (approx.) semi-sweet chocolate chips

6-inch skewers

 

Melt butter in a large pot over low heat. Once melted, add salt and marshmallows. Stir until completely melted. Remove from the heat and add Rice Krispies. Stir until well coated.

Transfer into a 9x13 inch pan, coated with cooking spray. Lightly dampen hands and press mixture evenly. Once cooled, use a large spatula to remove the entire mixture and place on a cutting board. With a large knife, cut the Rice Krispies treats into rectangular shapes and stick a skewer in the bottom of each.

Melt chocolate chips in a double boiler. Remove from the heat and let it cool slightly. Take each Rice Krispies Treat and dip one side into the chocolate.  Depending on the size bowl you use, you may need a spoon to help get the chocolate on. Place on a waxed-lined cookie sheet. Once they are all dipped, put the sheet in the refrigerator for 30 minutes to let the chocolate harden.  Serve on a dish or in a large bowl.
