Fabulous recipes the whole family will love - throw these in the crockpot before heading out the door for school drop-off!

SHREDDED BBQ BEEF  (kids and adults, alike, love it!):

4-5 lb chuck roast

Onion (sliced)

Green pepper (sliced)

1 cup of ketchup

1 cup of water

BBQ sauce (see my mom’s amazing recipe below)

 

Cook all ingredients together in crook pot for approx. 8 hours on low

Shred beef and continue cooking until ready to serve (best with fresh dinner rolls from Lunardis or Trader Joe’s brioche buns and serve as sandwiches)

 

Alice’s BBQ SAUCE:

Saute 2 tbsp. butter (not margarine!) with 2/3 cup minced onion

Add:

1 - 1/2 cup Heinz Chile sauce

1/2 cup Kahlua

4 tbsp. brown sugar

2 tbsp. Worcestershire sauce

1/2 tsp. salt

8-10 dashes Tabasco

Mix together and simmer about 5 minutes, then pour on top of meat in crockpot

 

NORTH CAROLINA SHREDDED PORK (My Southern hubby’s fav.):

6 lbs boneless pork shoulder

2 cans (14 oz.) diced tomatoes

1 cup vinegar

4 tbsp. Worcestershire sauce

3 tbsp. sugar

2 tbsp. (or less) red pepper flakes (depends on how spicy you want it!)

2 tbsp. salt

4 tsp. black pepper

Cook all together in crockpot on low for 8 hours

Shred and continue cooking until ready to serve

(Yummy again with fresh dinner rolls from Lunardis or Trader Joe’s brioche buns. Serve with some ‘slaw or a salad and you’re good to go!)
