BEVERLY HILLS, CA — Live jazz, locally sourced flavors and a Los Angeles themed craft cocktail list are all the ingredients that make up Ella — a new Beverly Hills restaurant opening on Thursday.

SIXTY Beverly Hills owner Jason Pomeranc teamed up with Umbrella Hospitality Group to open the new joint, which will open its doors at the hotel's street-level corner of Wilshire Boulevard and South Crescent Drive.

Designed by Austin Melrose with a menu curated by Executive Chef Brian Min, the quaint eatery will offer familiar Mediterranean, Asian and Italian flavors found around Beverly Hills.

Opening every day at 7 a.m., Ella will offer a coffee bar until noon. It will reopen at 5 p.m. with a dinner service that offers a social atmosphere fueled by live music and vinyl DJs. Dinner hours will also offer organic wines and a craft cocktail menu that "pays homage to the history of Los Angeles."

Melrose said he hopes that guests will feel a sense of nostalgia upon their arrival as the decor pulls from cultures found in Europe and New York, while including the general theme of "Cali Bistro."

"From start to finish, partnering with Jason Pomeranc and Sixty Beverly Hills was the kind of perfect collaboration you don’t come across often," Melrose said in a news release. "Together we were able to bring the kind of ambiance, design, food, and spirits to life that not only honor our city and neighborhood, but elevate the guest experience."

Vintage instruments and photography from Hollywood's golden era will adorn the walls for guests to enjoy.

"It is a place where you can literally watch the sun rise and set—grabbing a coffee in the morning and a nightcap at the end of the day. It is a space that simultaneously feels like home and an escape," according to the release.

The menu will feature items such as "Crispy Glazed Duck Wings (shirodashi caramel, lime, fresno, cucumber, fresh herbs), and Prince Edward Island Mussels (calabrian chili broth, lime, thai basil, chive) to Fresh Side Vegetables, transitioning on to richful pastas featuring Bucatini Pomodoro, Mafaldine Bolognese and Orecchiette," according to the release.

The cocktail list also includes a unique Kimchi Bloody Mary and a refreshing About Artemis, which includes coconut ashed Ford’s gin, pineapple, lime, green chartreuse, falernum and celery bitters.

And although the restaurant is on the street level, the SIXTY Beverly Hills also offers a newly reimagined rooftop cocktail lounge — the Umbrella Swim Club.

"The goal and process in reimagining our spaces with the Umbrella Hospitality Group was to create a true home away from home," Pomeranc wrote in the release. "From grabbing a coffee, to a cozy setting for work or social play, to a delicious dinner with quality cocktails, to a happy hour with a scenic rooftop view, we want everyone to feel welcome to do it all… including staying the night. I think we truly found a magical formula that allows guests to experience a destination staycation."
