
Chicken is a wonderfully versatile food and an excellent protein source.
In this class we will begin by learning about the craft of brining, sectioning, and watch a demonstration on how to butterfly a whole chicken. From there we will prepare 3 seasonal meals using chicken as the base. The class will finish by learning how to create stock from the remaining parts of the chicken to create soups and sauces in your own home.
