Come take a step back in time through a culinary journey along the ancient spice caravan route from Armenia to Lebanon, where sustainable foods were essential to life, as milk turned into yogurt, yogurt to lebne, and lebne to cheese. The caravan, on its route, was constantly sustained and its food sources always plentiful, yet the flavors were different from day to day as they acquired spices through trade along the way, flavoring as they traveled.
This hands-on class will focus on vegetarian Mezza dishes, which are small Middle-Eastern appetizers. Many of the dishes will include live foods that keep well without refrigeration, which makes them perfect for parties and picnics. The vast and exotic palate of flavors will include:
