Cooking Class: Bocaditos, the Tapas of Mexico

Bocaditos are the tapas of Mexico -- "small bites" from our neighbors to the south. They make great party food and can also be served as appetizers at your next Latin-American meal. We will start by making spicy tuna empanaditas with green chilies, olives, sharp cheddar cheese and hard-boiled eggs. We'll follow with memelitas made of corn masa formed into "little boats" and filled with refried black beans, caramelized onions, and cotija cheese. Next, who can resist shrimp simmered in a spicy chipotle sauce and skewered with pineapple chunks! And for dessert, individual servings of creamy, satisfying vanilla flan. For liquid refreshment we will make everyone's favorite -- mojitos, tangy lime-mint summery cocktails, with or without the rum!
