I must confess that I'm a chocoholic. But I've been able to curb this craving most of the time, since I find that eating too much chocolate late in the day makes it hard to sleep at night. I honestly don't know if the caffeine in chocolate keeps me up, but just the thought of interfering with precious sleep is enough to keep me away from a chocolate indulgence. But once in a while, a little taste is a wonderful treat. And this simple but tasty recipe that a friend sent me fits the bill perfectly.
BROWNIE BITES

Ingredients:
1 cup pecans

1 cup dates, pitted
2 Tbsp honey
1/4 cup shredded coconut, unsweetened
5 Tbsp cocoa powder
1/4 tsp sea salt
Directions:
Process pecans in a food processor until finely chopped.
Add dates, and process again.
Add remaining ingredients and process until thoroughly blended.
Take a small amount of the mixture, about 1 Tbsp, and roll into a tight ball.
Repeat until mixture is all used up. (should make about 18-20 balls)
Place on a plate or container and cover with plastic wrap.
Refrigerate for at least 3 hours. Can freeze for up to 3 months.
approx. 90 calories per ball.
