Burlap Serves Up Secret Menu Item
Shhh! Burlap serves a secret menu item called the "Secret Slurp." Find out what make the dish so delicious and so secretive.

In-N-Out is not the only restaurant with a secret menu. Burlap in Del Mar Highlands has a secret menu item, too. Just let your server know you'd like the "Secret Slurp" and hope Chef Anthony Sinsay can accommodate. Chef Sinsay only makes a few platefuls of this off-the-menu dish each night.
Burlap told Patch that the Secret Slurp is a ramen dish that takes several weeks of preparation.
We all know ramen as the college-staple noodles-in-broth-dish. But the Secret Slurp is an evolution of flavors, which begins with a shanton miso broth, made with stock from sea kelp and bonito flakes.

The stock is chilled and chicken feet, pork shanks and neck bones add depth to the base. Another layer of flavor is added with a two-week aged miso paste that's been blended with shrimp and soy sauce.
The noodles used in the Secret Slurp ramen have also been aged for two-weeks, allowing them a more chewy texture than normal noodles.

A marinated boiled egg and pork belly, which has been braised overnight in sake, soy and mirin, are added to the broth to further deepen the flavor of the soup.
The ramen is topped off with stir-fried snap peas, mushrooms, scallions, dried seaweeed and bean sprouts.
