  • Chicken – This is another lean protein that is often marinated in fruit juices and flavored with local spice blends for signature Caribbean flavor.
  • Fruit – Loaded with vitamins, minerals, antioxidants and phytochemicals, local favorites like mango, guava, papaya and plantains play a big role in flavoring Caribbean cuisine – from those fish and meat marinades to cooling the spiciness of dishes with a touch of sweetness.
  • Spices –Cinnamon, allspice, garlic, chilies, cumin, nutmeg, cayenne and more can all be found mixed and matched in Caribbean cuisine for a blend of sweet, spicy and savory flavor that adds rich variety with minimal fat, calories and sodium.

Caribbean food is a must try for its signature eclectic mix of tastes, textures and local ingredients, thanks to the nation's history something of a prized possession for other larger countries.  Steer clear of the fried plantains, and you should be just fine next time you and the scale meet.
