Easy edamame ala big, stinky garlic!

This isn’t your typical edamame – this is my easy edamame recipe that will blow your socks off. Or at least drive vampires away cuz it’s loaded with SO much garlic. This is a YUMMY snack or side dish that’s so good for you – and your weight loss goals. Edamame has only 100 calories and 10 grams of protein in 1/2 a cup of the shelled beans. Tip – always buy organic edamame! Oh, and did you know that if a food is organic, it can’t be genetically modified? Double win! Heat a pan on medium-high and add a little drizzle of olive oil. I use my non-stick Scan Pans. I love these pans because they’re non-stick, but don’t contain any of those funky chemicals. Add about 3 tablespoons of chopped garlic. To save time, I use pre-chopped garlic sometimes. Stir and cook ’til the garlic just starts to get fragrant and slightly brown. Add a bag of frozen, shelled edamame to the pan. Cook for a few minutes. Add some hot sauce or chili paste to spice it up – if you want. I usually add about a tablespoon. Cook ’til the edamame is warmed throughout. Turn off the heat. Splash with a little tamari or soy sauce and a tiny bit of sesame oil. So good! There’s a lot of controversy about whether you should eat soy (which is what edamame is) or not. I personally eat it on occasion, but it’s not part of my daily diet. I never eat processed foods that contain nasty, GMO soy. I eat organic edamame, tempeh, miso, and sprouted tofu once in a while.
