Healthy Recipe for Tropical Salmon

Healthy recipe for tropical wild salmon.

Here is a simple, high-protein recipe full of healthy fats, bioflavonoids and fiber that also tastes great.

Ingredients:

  • 4 8 oz filets of Wild Caught Salmon (Atlantic farmed salmon is so high in PCBs its almost flame retardant.  Never eat it)
  • 1 Orange
  • 4 TBSP Coconut Oil
  • 1 cup Organic Brown Rice
  • 2 cups filtered water
  • 3 chopped green onions
  • 5 garlic cloves chopped
  • quarter cup chopped almonds
  • 1 cup fresh Organic spinach (Spinach is on the EWG’s dirty dozen list, and must be bought organically)
  • 1 mango
  • Salt,Ground Pepper, Persian lemon, Cayenne

  1. Boil Rice in Water 40-45 minutes until done
  2. While cooking, place Salmon in baking dish, add pinch of salt, and ground pepper
  3. Juice orange and pour over fish, add 1 TBSP coconut oil over top
  4. Sprinkle with Cayenne pepper and pinch of ground Persian lemon
  5. Let marinate
  6. When rice is cooked, saute’ chopped onions and garlic over medium heat in 1 TBSP of coconut oil
  7. add rice and stir in chopped almonds
  8. Stir for one minute, cover rice mixture with spinach, cover pan and turn off heat, but leave on burner
  9. Broil salmon about 15 minutes or until light pink flesh flakes with a fork
  10. Remove from oven
  11. Stir rice and spinach, the spinach should be lightly cooked and bright green
  12. Serve fish with 1 TBSP coconut oil on top and mango slices accompanied with rice.  You may use the sauce from broiling the fish to flavor the rice.
