Eggplant Beatrice, what's your favourite recipe?

Our Eggplants will be ready soon...Eggplant..Aubergine...Brinjal...it is just as yummy by any other name.

This one is called Eggplant Beatrice. It is a mild and creamy Italian variety that stands well to grilling or even roasting. Ratatouille? Baba Ganoush? Baigan Bartha? It is like the darker and more robust cousin of Rosa Bianca. What is your favourite eggplant recipe?
