Liberated Pad Thai Kelp Noodles
- By featuring both kelp seaweed noodles and shredded kale, this “liberated” version of Pad Thai provides one-quarter of the recommended daily calcium intake, a third of the iron, and more than half the necessary vitamin K for maximum nutritional absorption, without that pesky peanut allergen. The noodles are also tossed with red bell pepper, carrots and sunflower sprouts for extra fiber. Thai almond sauce and rich teriyaki almonds push the contents of the wok to their limit by hitting both that satisfying salty-yet-sweet note and providing a gratifying crunch; it’s Pad Thai so good, you won’t know it’s healthy.
Mucho Mexican Grain Bowl
- Not your typical burrito-style bowl, this powerhouse dish offers “mucho” nutrition through uniquely Mexican ingredients, like nopales, (aka prickly pear cacti), which explode with vitamins and aid in digestion. Crisp romaine lettuce layered with protein and iron-packed black beans and grains provide a well-balanced base. Toppers include universally-loved guacamole, dairy-free cashew “nacho cheese” (for those delicious-yet-nutritious fats), and fresh Pico de Gallo that will make your mouth water. House-made Salsa Verde adds just the right touch of heat and acidity while bursting with roasted tomatillo and cilantro flavor.
Whole Macrobiotic Bowl
- This fusion-inspired macrobiotic bowl is built with protein antioxidant-rich adzuki beans, Teriyaki almonds, as well as vitamin-packed sautéed greens and sea vegetables seasoned kimchi style. As if the traditional garlic, ginger, scallion flavors weren’t enough to satiate the palate, braised butternut squash melts in your mouth and you’re even provided delicious, seed-based garlic tahini dressing.
