Treading in Sustainable Waters

Waters Fine Catering is Patch's Bites Nearby Pick of the Week

For a somewhat Euro and largely wholesome experience, Waters Fine Catering’s Solana Beach location is the “it” place. Items are on display behind a glass counter, giving visual learners the upper hand (we buy with our eyes, right?) Grab a slice of quiche lorraine and a salad for a light lunch or take home a medley of Kumquat Lemongrass Chicken, roasted vegetables and quinoa salad for dinner. Seating is sparse, but Fletcher Cove Beach is steps away, so an oceanfront lunch is well within reach.

The place embraces a slow and sustainable food mentality, thanks in part to Chef Andrew Spurgin who recently left his post after 13 successful years to open Campine, a catering and events company he helms with Chefs Brian Malarkey of Searsucker and soon-to-be Burlap and Antonio Friscia of Stingaree.

The Solana Beach location is a quaint fresh food grab and go, similar to Waters Fine Foods to Go, a Linda Vista-based nook. Fibonacci’s Campus Pointe Bistro by Waters rounds out the fresh food trifecta. The place is a fresh food cafeteria that evolved from a typical cafeteria that once served pre-made food on Styrofoam dinnerware. All food is freshly made and served on plates derived from sugar cane and flatware of corn or potato. Everything that can be composted is -- in the adjacent garden that provides fodder for select dishes. All grease becomes biofuel.
