The take-out spread for six people is $225 and includes a Cocoa Roasted Turkey breast, brioche mushroom stuffing, sage gravy, butter Brussels sprouts, whipped Yukon gold potatoes, candied yams, and cranberry orange compote. A wide array of red, white and bubbly wines are also available at individual pricing.
“The days have turned cooler, and we are in need of a delicious hearty flavors of the season from Fuego for the holidays,” said Greg Guthrie, General Manager at Hotel Maya - a DoubleTree by Hilton. “This year we have a traditional Thanksgiving menu from roast turkey with brioche mushroom dressing to stomach-warming roasted butternut squash soup, along with all the trimmings.”

Dine al fresco and celebrate Thanksgiving in Fuego and experience award-winning cuisine from Executive Chef Victor Juarez with stunning open-air views that include the Pacific Ocean, Long Beach Skyline and Queen Mary. Let Fuego be a part of your family’s Thanksgiving celebration and enjoy Latin inspired dishes that go beyond just turkey and gravy. Fuego will have live Latin Jazz music from 11 a.m. to 3 p.m. performed by Francisco Reyes Trio and from 4 to 8 p.m. performed by guitarist Andres Vadin.
Starters include a Jumbo Lump Crab Cake with roasted jalapeño remoulade, watercress, and a watermelon radish. The Roasted Butternut Squash Soup is topped with roasted candied pecans and Crème Fraiche. The colorful and tasty Tri Color Beets consists of pickled Heirloom Beets, honey cream Feta, micro arugula, candied Kumquat, and Pistachio Pesto.
Chef Juarez’s Thanksgiving dine-in menus feature entrée options including the Traditional Roasted Turkey served with brioche mushroom dressing, sage gravy, roasted candied yam, steamed French Green Beans, Yukon potato puree, and cranberry orange compote. The Prime Rib is a slow-roasted prime of beef with sweet garlic demi-glace, garlic potato purée, and balsamic glazed Brussels sprouts. The Pan-Roasted Chilean Sea Bass is cooked with fried sage-butter, blistered Heirloom tomatoes, Chanterelle mushrooms, and Kabocha squash purée. A vegetarian option is the Spinach Mushroom Risotto, which is served with black beans, spinach, Shiitake mushrooms, corn relish, pico de gallo, and Parmigiano Reggiano cheese.
For the holiday dessert there is the Pumpkin Cheesecake with to-die-for cinnamon whipped cream and candied pepitas or the Chocolate Lava Cake, a moist dark chocolate cake topped with Häagen Dazs Vanilla Ice Cream.
Feeling thirsty, guests can also enjoy Fuego’s Thanksgiving featured cocktail “Jalisco Sunset.” This specialty drink is created by one of Fuego’s talented mixologist and contains Casamigos Blanco Tequila, Grapefruit Liquer, Aperol, Lemon Juice and Agave Cranberry Soda. The Jalisco Sunset will have guests feeling “Thankful” they tried it!
