Fuego Rings In 2018 With Five-Course Dinner And Party Packages

Fuego at Hotel Maya rings in 2018 with two delicious five-course dinners and party packages on Sunday, December 31 from 5-7 p.m. and 8 p.m. Guests will also enjoy an outstanding view of the spectacular fireworks from the Queen Mary at midnight.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

Fuego’s New Year’s Eve Five-Course Dinner And Party Packages

Fuego’s New Year’s Eve five-course dinner begins with the choice of Wild Mushroom Bisque with caramelized leeks and chive cream foam; or Maldon Roasted Golden Beets with wild hibiscus flowers, frisée leaves, hibiscus vinaigrette, crème fraîche and chive oil.

Fuego’s second course features a choice of Australian Lamb Chops with gordo beans, pickled peppardew, mint chimichurri and cotija cheese; Jumbo Gulf Shrimp with quinoa corn polenta, manchego cheese and verde sauce; or Heirloom Tomato Terrine with layered vine ripened tomatoes, buffalo mozzarella, micro-basil, edged balsamic gastrique and toasted baguette.

Fuego presents an intermezzo as the third course in preparation for the entree such as a light and refreshing lemon Sorbet.

New Year’s Eve Entrees include one selection from Charbroiled Filet Mignon with guajillo béarnaise, asparagus spears, truffled potato gnocchi and whisky peppercorn sauce; Pan-Roasted Chilean Seabass with winter citrus beurre blanc, celeriac purée, shaved fennel, arugula, lobster and lemon oil; Butter Poached Maine Lobster Tail stuffed with jumbo lump crab and rock shrimp, roasted broccolini and lime cilantro sauce; or Saffron Risotto with sautéed garlic spinach, crispy mushrooms, butternut squash, roasted corn and shaved parmigiano reggiano.

Fuego’s final course features delicious desserts including Triple Chocolate Cake with layers of liquor scented chocolate cake, chocolate valrhona ganache, wild berries and vanilla crème; and French Truffles.

Guests will enjoy complimentary coffee, decaffeinated coffee or hot tea.

Fuego’s New Year’s Eve offers two five-course dinner and party packages that includes party favors. The first dinner and party package runs from 5-7 p.m. with seatings at 5:30 p.m., 6 p.m. and 6:30 p.m. The second dinner and party package begins at 8 p.m. with seating at 8 p.m., 8:30 p.m., and 9 p.m., with dinner guests having guaranteed seated viewing of the fireworks from the Queen Mary as well as a glass of champagne during dinner and a champagne toast at midnight.

Live music will be provided from 5-7 p.m. with Danny Maika and 8 p.m. to 12 a.m. with Chain Reaction.

Hotel Maya guests 21 and over that are looking to party sans dinner can enjoy a New Year’s Eve bash in Luna Solstice for $60 cover with disc jockey LA REGG and cash bar from 8 p.m. to 12 a.m. Fuego dinner guests will also receive complimentary access to the Luna Solstice party. Queen Mary fireworks are viewable from the space as well.
