Hop On Over To Fuego For Easter Brunch And Champagne
Guests will enjoy an appearance by the Easter Bunny, a family Easter Egg Hunt, a Face Painter, a unique Petting Zoo, and Live Latin Jazz

Hop on over for Easter Brunch in Fuego at Hotel Maya on Sunday, April 1 from 11 a.m. to 3 p.m. Fuego will also present live Latin Jazz music at the water’s edge.
Hotel Maya and Fuego Easter Brunch guests will enjoy an appearance by the Easter Bunny along with a family Easter egg hunt with prizes for the children. In addition, guests will receive free holiday stylings by Fuego’s Face Painter and experience a unique Petting Zoo with baby bunnies, baby chicks and baby ducks.
Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

For Easter Brunch, Executive Chef Victor Juarez has prepared a delicious meal that begins with sensational Salads selection of Green Salads and assorted dressings; Quinoa Tabbouleh Style with parsley, cucumber and citrus peels; Grilled Romaine Lettuce with Danish blue cheese and bacon; Roasted Corn Salad with citrus mayo, cilantro and cotija cheese; Spring Kale and Berry Salad with raspberry vinaigrette; Jicama and Mango Salad with tajin and piquillo peppers; and Roasted Beet Salad with pepper escabeche, pepitas and montrachet goat cheese.

Platters and Displays offer Cheeses and Charcuterie with assorted domestic and imported cheeses with smoked deli meats; Antipasto with grilled asparagus, zucchini, olives, and artichokes; Fresh Fruit, Melon and Seasonal Berries; Heirloom Tomatoes; and Buffalo Mozzarella.
Easter Seafood and Ceviches specialties include Jumbo Gulf Shrimp and Alaskan King Crab Legs with citrus cocktail sauce and horseradish aïoli; Fuego Ceviches featuring Citrus Bay Scallops and Calamari, along with Hojas de Seabass and Mexican Shrimp Cocktail; and smoked salmon mini bagels, cream cheese and traditional condiments.
Fuego’s Famous Taco Bar features a fresh selection of Cilantro Jalapeno Grilled Skirt Steak, Tequila Lime Chicken and Swordfish, along with pineapple salsa fresca, fired roasted tomato salsa, crema fresca, pico de gallo, chile de arbol salsa and jalapeno cotija cheese.
The Easter Holiday Carving Station serves Prime Rib of Beef with cream horseradish, Dijon mustard, and sweet garlic glaze; and Roasted Bone in Ham with pineapple rum glazed.
Fuego’s Easter Brunch Hot Entrées include a choice of Eggs Benedict with spinach, bacon and guajillo hollandaise; Pan Dulce French Toast with strawberry cream; Chile Relleno with poblano chiles stuffed with Mexican cheeses and ranchero sauce; Yucatán Beef Barbacoa with adobo braised prime short rib; Seared Fillet of Salmon with guajillo citrus sauce; Chicken Tinga with achiote braised shredded chicken; along with Paella Rice with saffron scented rice; Roasted Potatoes with onions and peppers; Smoked Bacon; and Caramelized Plantains.
Easter treats include a selection of miniature desserts, crème brûlée, Parisian macaroons, and chocolate éclairs, along with fruit tarts, grand marnier cream puffs, artisan breads, mini brioche, Mexican caramel flan and assorted mini cakes.
