Join Fuego’s 2017 New Year's Celebration With Dinner And Party Packages, New Year’s Day Brunch

Fuego at Hotel Maya celebrates 2017 with two delicious four-course dinner and party packages on Saturday, December 31 from 5-8 p.m. and 9 p.m. Guests will enjoy an outstanding view of the spectacular fireworks from the Queen Mary at midnight. Fuego also presents a holiday brunch on New Year’s Day from 11 a.m. to 2 p.m.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and Queen Mary.

Fuego’s New Year’s Eve Dinner And Party Packages

Fuego’s New Year’s Eve four-course dinner begins with the choice of Double Mushroom Soup with truffled cream, duck chicharron and port gastrique; or Amber Charred Beet Salad with crème fraîche, maché lettuce, guajillo vinaigrette, candied walnuts and chive oil.

Fuego’s second course features a choice of Australian Lamb Chops with gordo beans, pickled peppers, mint chimichurri and cotija cheese; or Maryland Lump Crab Cake with manzano pepper coulis, charred romaine leaves and pickled meyer lemon.

New Year’s Eve Entrees include one selection from Coffee Rubbed Filet with coffee and porcini rubbed filet mignon, pasilla roasted demi, caramelized Brussels sprouts, pumpkin seeds and Yukon potato purée; Pistachio Crusted Chilean Seabass with añejo lime beurre blanc, boniato purée, parsnips, and arugula lobster salad; Sweet Butter Poached Main Lobster Tail stuffed with lump crab and rock shrimp, Lemon Herbed Butter, along with peas, wilted green and saffron rice; or White Truffle Risotto with sautéed garlic spinach, oyster mushrooms, butternut squash, roasted corn and parmigiano reggiano cheese.

Fuego’s delicious desserts include Chocolate Roca Ganache with layers of valrhona chocolate, salted caramel cream, bittersweet chocolate and candied almonds; and Chocolate Truffles.

Guests will enjoy complimentary coffee, decaffeinated coffee or hot tea.

Fuego’s New Year’s Eve offers two four-course dinner and party packages that includes party favors. The first dinner and party package runs from 5-8 p.m. with seatings at 5 p.m., 5:30 p.m. and 6 p.m. The second dinner and party package begins at 9 p.m. with dinner guests having guaranteed seated viewing of the fireworks from the Queen Mary at midnight as well as bottomless champagne during dinner.

Custom Made Band will provide entertainment until 1 a.m.

Hotel Maya guests 21 and over that are looking to party sans dinner can enjoy a New Year’s Eve bash in Luna Solstice for $25 cover with a disc jockey and cash bar. Fuego dinner guests will also receive complimentary access to the Luna Solstice party. Queen Mary fireworks are viewable from the space as well.

Fuego’s New Year’s Day Brunch Buffet

Fuego New Year’s Day Brunch Buffet features holiday Soup with delicious Lobster Bisque with Mezcal and Serrano cream.

Fuego’s Assortment of Salads and Displays include Roasted Acorn and Hen of the Wood Mushroom Salad; Baby Romaine Salad; Heirloom Beets and Goat Cheese Salad; Quinoa and Kale Salad with almonds and apple chips; Grilled Asparagus, Shallots and Fig Balsamic; International and domestic cheeses; Water crackers and baguette; Charcuterie; and fresh fruit and berries.

Fuego’s Seafood and Ceviches include Jumbo Gulf Shrimp, Alaskan King Crab Legs, Shrimp Ceviche with citrus chipotle marinade, and Scallop and Calamari Ceviche with pineapple mojo.

Fuego’s Omelet Station offers prepared to order omelets with an assortment of vegetables, meats and cheeses.

New Year’s Day Carving Station features Prime Rib of Beef with sweet garlic demi glace, creamed horseradish and buttery brioche.

Holiday Entrées include a selection of Lobster Eggs Benedict with guajillo hollandaise sauce, applewood smoked bacon and caramelized sweet plantains; Pan-Roasted Fillet of Salmon with pomegranate butter sauce; Herbed Crusted Rack of Lamb with rosemary port reduction; Game Hen with gordo beans succotash and chipotle orange glaze, roasted cauliflower, candied bacon and tomato marmalade, and roasted garlic mashed potatoes.

New Year’s holiday bakeries delights offer a selection of miniature desserts and petit fours including yule logs, bourbon chocolate pecan, pumpkin bread, eggnog crème brûlée and caramel eclairs.
