Healthy Lunch Recommendation

Let’s face it, we would all eat a whole lot healthier if it was as easy and cheap as eating unhealthy. Well it can be even easier and almost as cheap, you just have to know what is possible! Last week I made this for lunch for Russell and myself and we both absolutely loved it so I am sharing my simple recipe with you.

Ingredients: One piece of whole grain bread, two eggs, goat cheese, spinach, salsa

  • Prepare two eggs sunny-side-up (or however you prefer your yolks)
  • Toast a single piece of whole-grain toast, cut it in half and sprinkle just a little bit of goat cheese on top.
  • Place spinach on top of the toast, place the eggs on top of the spinach, pour just a drop of Tapatio or salsa on top and there you have it! A healthy, simple, tasty, cheap lunch.
