Lorelei's Yummy Fresh Peach Pie
1 cup blanched almonds, ground medium fine
1 cup moist flaked coconut
1/4 cup each, sugar and softened butter
Combine almonds & coconut. Work in sugar and butter with your fingers. Press evenly into a 9" glass pie pan, reserving 3T.
Bake @ 375º for 10 to 12 minutes.
Remove & cool completely.
FILLING:
1 cup sour cream + dash of salt
6 T. powdered sugar
1 tsp. each, orange juice, grated orange rind & vanilla
Stir together & pour into bottom of cooled shell.
Arrange 3 cups sliced fresh peaches over sour cream mix
Whip together 1/2 cup whipping cream + 2T. powdered sugar - Scoop over peaches.
Toast reserved 3T. crumbs, in shallow pan for 5 mins. Sprinkle over top. CHILL.
