
For dinner, I made up something a bit different than usual...but the whole family loved it! I smoked some chicken breasts over some apple-wood logs. I then sautéed a mixture of julienned- purple potatoes, zucchini, and some Anaheim chilies-this is the veggie you see on the plate. I made a frico to go underneath the chicken. ( A frico is a melted cheese crisp-I used Tillamook, aged, sharp white cheddar for these.) To complete the dish, I then drizzled a peppercorn mustard cream sauce over the top of the chicken. The kids were asking for seconds, and thirds. ....might have had something to do with the cheese crisp:-)
