Strawberry Lemongrass Popsicles

8-10 4” plastic or paper cups
8-10 Lemongrass stalks
1 pound strawberries, washed, hulled and sliced
¼ c sugar
2 cups pink lemonade

Peel away outer tough layers of lemongrass stalks, leaving only the tender, smooth, inner whitish stalks. Set aside.

Blend the remaining ingredients in a blender, leaving strawberries a bit chunky. Pour into 4” paper or plastic cups. Place lemongrass ‘sticks’ in the drink mixture. Use tape to hold the lemony sticks in place. Put in freezer until frozen completely. Remove from freezer and loosen popsicle from the cups. Enjoy on a hot day.
