Winter Fruit Salad with Zutano Avocado
Add a vegan friendly - protein filled salad to your holiday feast!
What do you do if you have a friend or relative who is vegan or vegetarian? How about people who have diabetes or need food that is gluten free, lactose intolerant, no dairy, etc. etc. Check out this healthy, easy salad using easy to find winter fruits!
Did you know that avocados have seasons? Yes, different varieties ripen and are more yummy in different seasons. For example: Zutanos and Bacons JUST became available and the Diva has some in stock for shipment. You can use any avocado, but I love to take advantage of the lighter, fruitier winter avocados in special salads, desserts and smoothies/milk shakes.

INGREDIENTS:
2 Zutano or Bacon avocados
2 grapefruits
1 pomegranate
1/2 T fresh ground pepper

Pit and then slice avocado into long slices. Arrange on platter. Supreme grapefruit slices* (reserve 1/2 cup of juice for dressing) and put between slices of avocado. Seed pomegranate and sprinkle seeds all over the salad. Make dressing (see below) and spoon over top. Grind fresh pepper over salad as final flourish.
DRESSING:
1/2 Cup grapefruit juice
1 Cup extra virgin olive oil OR avocado oil
1 Tablespoon Diva spice mix for guacamole
Put grapefruit juice and spices in a tall sided bowl. Slowly (slowly!) drizzle in oil while whisking vigorously so that the oil and juice emulsify.

*To "supreme" a citrus fruit - you cut all the rind off, then cut the fruit slice out from "between" the white, pithy slices. Thus the fruit is perfect with no bitter pith.
