For Down to Ferment, flavor first is their top concern. Their sauce is fermented for over a month, and during that time it matures in flavor. They utilize their own batch of over brewed kombucha in all their sauces, that balances the flavor profiles better than vinegar. Not only that, but they can truly call their sauce completely homemade. And are proud of that. With unique flavors mixed with different heat levels they can offer a large variety of sauces that can please many palettes.

There sauces have NO vinegar, are Vegan and Gluten free. Their hot sauce is different from most. It has zero vinegar in it. Vinegar can be overpowering to the actual flavor of the pepper and everything else in it. There are very few sauces that can truly capture the flavor of the pepper or are just spicy for the gimmick of it.

And they are not just a corporate, faceless entity. Sean volunteers with the wonderful organization More Than Apples, Inc. It is a food redistribution non-profit organization, run by volunteer members of the community in North County San Diego.

They save food that is destined for the landfill, for various reasons. Stores have a continual rotation of product, which sometimes means perfectly great food gets thrown away. Sometimes the food is close to best by date, past the best by date, damaged packaging, etc. Sean not only volunteers with this organization, but sometimes is able to make products for them out of their tossed out produce!

They also have an online shopping cart where you can purchase your favorites anytime.

So if you are looking for a spicy sauce or rub, that’s more about flavor than just heat, come to the Oceanside Farmers Market on Thursdays and sample some unique sauces from Down to Ferment, that will please not just your heat index, but is flavor full and fermented the natural way.
