- Roll-em-up, Orange County! Roll-Em-Up Taquitos, a fast-growing California rolled-taco chain launched in 2019, plans two new locations in Irvine and three in Riverside County, company officials said this week. The Inland Empire restaurant started by a father and son team has restaurants in Brea, Chino Hills and Victorville. The eatery uses family recipes for its simple menu of rolled tacos, including beef, chicken, potato, cheese and avocado. Don't forget the side dishes and homemade guacamole and salsa. - A shout out to Rancho Santa Margarita 6th grader Jason Ross, who wrote a wining poem about his mom in the "Why Mom Deserves a Diamond" contest. When English teacher Beth Sarachman encouraged her class to write a poem about their mom's for the The Mother's Day contest, twelve-year-old Jason had no idea he would win. He said he plans to have the diamond put into a necklace. Mike Watson started the Mother's Day contest 30 years ago by to honor his adoptive mother and the birth mom he never knew. The Rancho Santa Margarita student said he loves reading, but poetry is not his thing. He added, "I guess it is now." You can read more about this story here: (CBS News)
- Thanks to the O.C. Zoo staff, a pair of mountain lion cub sisters are healthy and thriving! O.C. Parks commented on how much the cute cub duo has grown since coming under the care of the zoo, in a recent Instagram post. O.C. Parks said the two cubs were found in poor health without their mother late last year in Thousand Oaks. "The cubs still need names," O.C. Parks added, so be sure to stop by the naming booth during the Opening Celebration of the large mammal exhibit on Friday, May 13 and Saturday, May 14! (Instagram)
