An extensive ongoing study in Europe has determined thatΒ eating more vegetables and fruit can extend your life.Β Β Dr. Andrew Weil,Β the famed health expert and respected physician, writes in his articleΒ βHow Vegetables Can Save Your Life,βΒ that the βstudyβs findings are impressive, especially since the amount of fruits and vegetables that made a difference was relatively low, only 2.4 cups a day.β Scientists inΒ 10 countries have been following more than 450,000 people for over 13 years, during which time about 26,000 of the participants have died. Here are some of their conclusions:
β’Β 2.4 cupsΒ of vegetables or more daily =Β reduced the risk of death about 10%Β and delayed that risk for 1.12 years compared to people who consumed less than 9 oz. of vegetables/fruit daily
β’ for everyΒ increase of 1 cup of daily fruits/vegetablesΒ = mortality risk drops byΒ 6%

Vegan American Princess agrees wholeheartedly that generally theΒ more vegetables and fruit you eat daily, the better off you will be. It seems that widespread, publicized studies like these are starting to Β lead Β more and more people towards adopting a plant-based diet.Β But the benefits may continue to grow beyond better health and lower risk of disease and death.
