Pizzeria is a restaurant specializing in the sale or service of pizzas and other Italian specialties. Known for its high profitability, pizza is extremely popular in France, which is the second largest consumer of pizzas in the world, with 809 million pizzas swallowed each year.

The pizza is a pie original Italian, made of paste and bread spread tomato sauce, covered with various ingredients and baked in the oven (wood, gas or electric). Pizza is one of the dishes of Italian cuisine that has become established almost everywhere in the world, often adapting to local tastes.

Until the introduction of the tomato (one of the main ingredients of the current pizza) in Europe and its use in the kitchen at the end of the 17th century, the so-called "pizza" then had nothing to do with that of today: it was presented in different forms and of several types whose variety was not limited to the fillings but also extended to the cooking modes (oven or pan in the oil).

According to an epidemiological study published in 2003 in the journal International Journal of Cancer, pizza consumption significantly reduces the risk of certain cancers. She revealed that those who eat pizza, one to several times a week, are less affected by cancer than those who never eat it. The risk of a tumor of the oral system decreases by 39%, those of the esophagus decrease by 59% and those of the colon by 26%.

The survey was carried out by the Pharmacological Institute of Milan among 3,315 Italians suffering from a tumor of the digestive tract or throat. Their eating habits were studied in detail and compared with those of a sample of nearly 5,000 other people with other conditions.

Preparation of the dough: water, salt, wheat flour type 00 and yeast. Add up ingredients and mix, form balls as big as the fist and leave to rest at ambient temperature three to four hours minimum.

Preparation of the pizza: each ball is spread preferably by hand (because the roller crushes the air bubbles in the dough) on which the ingredients are placed.

Cooking: oven to firewood about 1 minute of cooking at 400°C .

For example for the Margherita pizza like those of Numero28, the simplest: a tablespoon of tomatoes, crushed mozzarella with hands, one or two fresh basil leaves, a hint of olive oil, baked, and to consume quickly.

Pizza is an easy recipe to prepare at home, simply by hand, or using commercially purchased products (pizza pasta already ready) or already made (even frozen).
