
It is warm outside, school is nearly finished and the kiddies (as well as the mamas and the papas) will be wanting some refreshing, icy treats. Why not blend up something delicious, as well as nutritious, for yourself and your family this summer? True to form, my recipes are always SO simple, SO delicious and SO nutritous . . . enJOY!!
1 c almond milk, commercial or freshly made
1 c soaked, rinsed and drained raw cashews
¼ c maple syrup or agave (or to taste)
1 t pure vanilla extract
1 T lecithin
¼ t sea salt
Blend all ingredients until silky smooth. Test the blended mixture between your fingers and make sure there is no grit whatsoever – this is the secret to success!
Layer with fresh fruit in molds (www.coldmolds.com) or place the mixture in an ice cream maker according to manufacturer’s directions.
Be creative - add whole fruits, blend fruits, cacao, etc . . . frozen YUM!
