When I was a college gal back in the early 90's, I was lucky enough to be introduced to my first fish tacos at the Rubio's located within walking distance of SDSU. We walked over after a long day of classes and tried the best tacos I had ever had.
What had been a local college joint for me has blossomed into over 190 locations and a much larger menu than just the famous fish tacos. Mexican food in general is usually very gluten free friendly, and Rubio's is no exception.

All of their proteins are GF, as well as their delicious rice and beans. All of their chips and salsas are included too. I want to commend Rubio's for having such an accessible menu that was easy to find on-line.
My little one is a huge shrimp fan and was able to order their shrimp enchliadas with beans and rice and didn't have to modify her order! That was huge for her. I ordered the new Chipotle Chicken Salad with rice beans and creamy chipotle sauce. We munched on some crunchy chips and salsa while we waited and when lunch arrived we were not disappointed.
The shrimp enchiladas were full of shrimp and covered in a tasty verde sauce and cheese. Very filling and I think we could split that plate next time. My dish was very large as well! I loved the combination of all the rice, beans, salsa and chicken. It was topped with my new favorite sauce, the creamy chipotle. It had a kick, but not too much.
I love knowing that Rubio's has a delicious and wide variety of healthy "fast food" that is GF for my daughter, and we look forward to trying it again soon!
