
Elizabeth Borelli’s passion for environmental advocacy led her down a path she wasn’t expecting. This former owner and founder of online sustainable goods retailer Nubius Organics became increasingly convinced that the road to both planetary and personal health begins in the kitchen. It soon became clear that hers needed a serious overhaul. Borelli began research the work of dozens of leading experts in the field of diet and nutrition, and evolved her own diet based on what she learned.
Several years later, a happier, healthier Elizabeth found herself so inspired, she went on to earn a certificate in Nutrition Fundamentals from Cornell University to augment her knowledge of diet and nutrition. Yet now with a family of four, she faced the other common barriers to healthier eating: lack of time and know-how. She realized she needed a system to keep her family thriving, and grew increasingly passionate about helping other moms to do the same. More research, lots of food preparation trial and error and over 80 recipes later, Beanalicious Living!was born.
