Uovo serves some of the most iconic Italian pasta dishes, according to the press release, and all pasta is made using the traditional, labor-intensive technique of sheeting and cutting, using special red-yolk eggs only found in Italy.

"To bring some of the great dishes from my home town to my new home is a dream come true. We put our hearts into these dishes and can't wait for our guests to try them," Uovo Co-Founder Carlo Massimini saud in a statement.
