Heather’s Notes: Simple to make - perfect for a child who wants to start cooking. My daughter makes this one by herself. The Bitchin’ Sauce adds HUGE flavor without taking away from the healthy side of this meal. 1 cup of quinoa will serve 4. I’ve made 1 1/2 cups of quinoa with 3 cups of liquid and had lots of leftovers for busy water polo nights. Enjoy!

1 cup quinoa
2 cups chicken broth or water
1 can black beans - rinsed and drained
1 small bunch cilantro - chopped
Lime juice
Garnishes:
Diced avocado
Diced tomato
Diced mango

Toast the quinoa in a dry pan until it starts to smell warm. Add the broth or water (carefully - its going to steam!). Bring to a boil, reduce heat to medium and simmer for 15 minutes. While its cooking, wash and chop the cilantro, rinse and drain the beans, and dice the other garnishes you plan to use.
At 15 minutes, remove the lid and stir in the beans cilantro and lime juice. Replace the lid and allow to steam for another 15 minutes. Spoon into bowls and add the garnishes. This is a delicious healthy meal that will keep in the fridge and reheats well.
