Food trucks in the I.E.

As a few of you might have read, the food truck movement (if you want to call it that) took a step in the right direction in late June.  According to PE (Riverside County: Food truck restrictions could be eased, June 26) the county supervisors began the process by voting 5-0 to lift the restrictions set in the 80s on food trucks. This process is obviously the first of many to take place before we see rubber-to-pavement moves of any street truck vendors. With such an event or change in restrictions will come optimistic and skeptical thoughts on the immediate impact of the modern-day food truck.  So I ask this: What are the chances that this 'movement' will gain ground? What are some of the potentials or downsides of such a change?
