Thanksgiving Cornbread Stuffing

Thanksgiving just isn't Thanksgiving without Stuffing. Want to try to do things a little different without breaking tradition? Try our revamped Cornbread Stuffing!

Cornbread:

1 ¾ Cup Yellow Cornmeal

4 Slices of Bacon

1 Tablespoon of sugar

1 Teaspoon of baking powder

1 Teaspoon of baking soda

1 Teaspoon of salt

1 ½ Cups of Milk

1 ½ Cups of Heavy Cream

2 Large Eggs

Stuffing:

1 Pound of Hot Italian Sausage

2 Cups chopped Onions

1 ½ Cups Celery chopped finely

½ Red bell peppers seeded and diced

½ Yellow or orange bell pepper seeded and diced

½ Green Pepper seeded and diced

½ Cup fresh Parsley Chopped

2 tsp Migliore Classic American Seasoning (Available at Artisan’s Palate)

1 tsp fresh Thyme Minced

¼ Cup Citrus Balsamic Vinegar (Available at Artisan’s Palate)

2 Eggs

Cornbread:

Preheat oven to 450 degrees. Cook bacon to crisp, chop & set aside. Reserve bacon grease for 8” baking pan. In large bowl, combine bacon, cornmeal, sugar, baking powder, baking soda, and salt, and mix well. In separate bowl, whisk together milk, cream, & eggs. Add the milk mixture to the cornmeal and blend. Place the empty baking pan in oven, heating until grease just beings to smoke. Pour in the batter and bake 20 to 25 minutes. Cool Completely.

In skillet, cook **ground sausage mix about 3 minutes. Add onions, celery and peppers, reduce heat to medium and continue to cook, approximately 10 minutes. Cut the corn bread into cubes and transfer to a large bowl. Stir in sausage mixture until well combined. Add parsley and seasonings, mix thoroughly. In a cup, whisk balsamic and eggs until well blended, then mix into stuffing. Refrigerate stuffing before placing in turkey cavity. Once cold, stuff turkey and roast.
