New Bakery Set To Open In Canton Soon

The bakery, featuring all sorts of treats, cakes, and pies, will be in the same plaza as a prominent cupcake place that recently closed.

CANTON, CT — A new bakery is set to open in the Canton Village Shopping Center in spring 2026, bringing what its founder describes as a flavor-focused approach to the local dessert scene.

Ann Schaefer-Reid, founder and owner ofThe Frosted Sheep Bake Shop, said she developed her recipes over several years through repeated testing and feedback from friends, colleagues, and community members.

“Flavor should be present in every bite,” Schaefer-Reid said in her online store profile. “A lemon cupcake should truly taste like lemon. A chocolate cookie should be deeply, unmistakably chocolate.”

The Frosted Sheep Bake Shop will be located at 220 Albany Turnpike, Building 5, Rear Unit. Schaefer-Reid said the shop will offer a focused menu rather than a wide array of items, featuring classic favorites, seasonal flavors, and rotating specials.

Schaefer-Reid said she is working behind the scenes to prepare for the opening and plans to welcome customers in spring 2026.

The Frosted Sheep is located in the same space as the former 'Cake Gypsy' cupcake bakery, whose successful run ended last year when the owner opted to retire.

Schaefer-Reid said she refined recipes in her home kitchen, sharing batches at her office and at car events hosted by her husband, Andy, to gather feedback before finalizing them.

She also visited bakeries across the country to study what makes desserts memorable.

Her work has earned recognition beyond Canton.

Schaefer-Reid won first place at a baking competition at Bristol Community College for both her chocolate cupcakes and a cactus garden cupcake design.

In 2023, she competed in the Silos Baking Competition hosted at Silos at Magnolia in Texas, founded by Chip Gaines and Joanna Gaines. She was selected after submitting an entry video created with her husband that shared her recipe and its background.

For the competition, Schaefer-Reid presented her “Sunday Breakfast Cookie,” a blueberry cookie topped with maple glaze and candied bacon, inspired by her husband’s Sunday morning routine.

She said the experience strengthened her confidence and reinforced her belief that desserts should be “full of flavor, bold, and thoughtful.”

Rather than expanding quickly, she said she is intentionally limiting the selection to ensure quality and consistency.

The name and sheep logo reflect her personal interest in collecting sheep-themed items and her early days baking at home, she said.
