Bagel Shop Opens In Old Saybrook

Duby's Bagels & Bakery opened this week at a Boston Post Road location.

OLD SAYBROOK, CT —Duby's Bagels & Bakery opened in Old Saybrook at 785 Boston Post Road on Monday, according to CT Insider. Owner Duby Shelsky grew up in New York City where he learned to make the New York-style bagels the shop will serve.

Shelsky began the business four years ago in Old Lyme, where he sold sourdough bread and baked goods at farmers markets and out of his home, according to CT Insider.

As demand grew, Shelsky decided to set up shop at a space in Old Saybrook with a bigger oven.

Shelsky said he was exposed to many different cuisines from an early age. His mother is from Havana, Cuba, and his father is from Buenos Aires, Argentina.

"Today, I find myself leaning toward the ethnic foods my mom didn’t make - bagels, bialys, rugelach, chopped liver, smoked salmon, and sourdough bread," he wrote on the shop's website. "Living on the CT shoreline, I miss a great bagel, an authentic sourdough boule, and a plethora of toppings to go along with it. So I’m excited about opening Duby’s Bagels and Bread in Old Saybrook on the Post Road. I love to share, so I look forward to NY transplanters and newbies to this awesome cuisine. The grand opening will be on November 24th (if everything goes as planned!), and I look forward to seeing you visit a little bit of NYC heaven."
