Salsa Fresca In Danbury Taps New Exec, Plots Expansion

DANBURY, CT — Restaurant chain Salsa Fresca Mexican Grill, headquartered in Danbury, has named a former rival's executive as its Chief Operating Officer.

Eric Friedman was previously New England team director for fast casual Mexican food industry-leader Chipotle.

In addition to franchises in Danbury, New Haven and West Hartford, the chain also has eateries in eight New York locations. The company plans on doubling its number of restaurants over the next year, according to a news release.

"A key factor in growth will be keeping that culture where it is. We want to retain that same engaging experience in all of our new restaurants, and keep that same feel that we have today, over the years to come," Friedman said.
