St. Patrick's Day Fruit Rainbow with a "Pot of Gold"
A fun, simple and healthy party idea that even the kids will love!
Are you planning a St. Patrick’s Day celebration and need some ideas for healthy treats and snacks? Or have to bring in a themed snack for your child's class? This is a healthier take on Pot of Gold treats with a natural rainbow of goodness.
Create this Rainbow Fruit Platter using strawberries, oranges, pineapples, green grapes or kiwi, blueberries, red/purple grapes by arranging on a large platter in rows creating the colors of the rainbow. Then create the pot of gold with bananas in a small ramekin dish and make some clouds with miniature marshmallows. It's easy and healthy! As an alternative, add a small bowl of chocolate candy coins or gold wrapped Rolo candies for the pot of gold instead. It is all delicious and the kids will just light up when they see how cute this is.
You can wash and cut the fruit the day before the party, so all you need to do on party day it set it out for your guests or just bring it to wherever you need to go. I have also seen cute variations of this idea where the fruit pieces were put on skewers.

The best thing about this simple and super yummy treat is that you can change things up however you want. If you don't like strawberries, try red raspberries! Do not care for pineapple? Try bananas instead. The sky is really the limit here!

- Red: cherry tomatoes,
- Orange/Yellow: carrots, cheese
- Green: broccoli, olives, celery, pickles or cucumbers
- Blue/Purple: red cabbage, eggplant
For the clouds you could use cauliflower florets and the pot of gold could be the coined carrots. Arrange the vegetables into the shape of a rainbow and add the cauliflower to the ends for the clouds.
