Food Day Iron Chef Winner a Cinch (Slider)

The “Iron Chef Competition” held at Fairfield Warde High School two weeks ago, pitted three local chefs against each other to create a healthy lunch entrée – and win over Fairfield Public School students. Each of the chefs — Wayne Uccellini, cafeteria manager at Osborn Hill School, Michelle Ryan, Whole Foods Market chef, and Shawn Russell, chef of Cinch and Sherman School parent — worked from a fixed list of ingredients to create a tasty school lunch that also follows Federal nutrition standards.

Over 350 students showed up for the competition to taste the offerings and vote. The “Cinch Slider,” a delicious veggie burger concocted by Shawn Russell, garnered a majority of the votes. Russell underscored the importance of ingredients: “You have to start with the freshest ingredients to make something that actually tastes good.”

The winning “Cinch Slider” combines beans, carrots, rice and potatoes with cheddar and mozzarella cheeses and herbs for a visually appealing and tasty burger. The entrée will be featured on the December school lunch menu at the Fairfield public schools.
